Eliot and I discovered waffles quite soon after moving to Norway and had bought a machine by week 3! I apologise for yet another post about food but this cannot go unmentioned. Not a week goes by in a Norwegian home without a waffle being eaten – you just make up a tub full of mix, keep it in the fridge and when you’re feeling peckish you just grab the machine and cook up a waffle – takes 5 minutes max!
Waffles are a Norwegian tradition. Unlike Belgian waffles, Norwegian waffles are large, soft and fluffy and fit pefectly folded in your hand – a great snack food. If you buy the waffle mix off the shelf in supermarkets you’ll be able to taste the Cardamom, a common spice used in Norway. However, home made mixes tend to leave the spices out.
The toppings are simple but yummy – if you add some Romme (sour cream) and jam it tastes delicious. Or you can eat them with brown cheese, as many Norwegians do, but I just can’t understand why you would want to ruin such a wonderful taste experience. For those that can’t buy the ready mix, here’s a recipe…oh…you might need a waffle machine!
Everyday Waffles
500 ml plain flour
2 teaspoon baking powder
100 ml sugar
500 ml milk
2 eggs
50 ml melted butter
drops of vanilla essence for flavour or Cardamom
Method
Make a smooth batter with the flour, baking powder, sugar and milk. Beat in the eggs and butter (and Cardamom). Let the batter set for 30 minutes before cooking in a waffle maker.
